Chocolate Thumbprint Cookies


Ingredients
*1 cup all-purpose flour (sifted)
*1 tsp salt
*1/4 cup packed light brown sugar
*1 egg + 1/2 tsp vanilla extract (beaten together)
*1 stick butter
*chocolate candies (1 per cookie)

1. Preheat the oven to 375°F.
2. Combine the dry ingredients in a bowl.
3. Using your fingers, incorporate the egg + vanilla into the dry ingredients, creating crumbs to the point of it feeling like damp sand (no chunks, if possible).
4. Add the stick of butter to this mixture and knead until the dough is formed. Don't add additional flour (or else you will be tasting the flour when you eat the cookies)!
5. Ball up some dough into 1" rounds and place on a non-greased cookie sheet.
6. Press down gently with thumb to create a slight bowled-out shape. (Not doing this will mean risking your cookies coming apart later post-baking...)
7a. Bake in the oven for about 10 minutes or until the dough becomes golden brown.
7b. As the cookies are baking, unwrap your chocolate candies if need-be so that they're ready to go. 
8. Carefully take the cookies out of the oven once baked and quickly (but gently) push a chocolate candy into the centre of each cookie. Don't push too hard; the cookie will slightly melt the chocolate candy helping to adhere it to the cookie itself. Allow the cookie to cool completely and, if you can wait, allow the chocolate candy to re-solidify. Otherwise, enjoy these warm and deliciously addictive cookies!

Makes about two dozen.
Alternatively, you could fill the cookies with jam, etc. Just be sure to make bigger grooves with your thumb prior to baking.
